Today, we’re shining the spotlight on the unsung heroes of the Yorkshire Dales Meat Company: our butchers.

A 5am Start – and Not a Grumble in Sight

Butchery at Mill Close Farm begins long before the first van hits the road. Our team are in and working by 5:00am, ready to prep, portion, and package the day’s orders.

Why so early? Because we believe that freshness matters, and in order to deliver same-day meat to restaurants, shops, and homes across Yorkshire and beyond, we have to get ahead of the game. By the time most kitchens start to prep for lunch service, we’ve already got your delivery at the door.

It’s a demanding schedule, but our team handle it with quiet pride—and a lot of strong tea.

More Than Just Cutting Meat

Butchery isn’t about hacking at meat on a table. It’s a craft—a skilled, precise trade that takes years to master.

Our butchers know their way around a carcass with total confidence. They can break down a side of beef into perfect sirloins, fillets, and briskets. They can bone and roll a pork shoulder for slow roasting. And they can do it quickly, cleanly, and with total consistency.

Meet the Team   – You might not see them out front, but our butchers are very much part of the face of the business. Here are just a few of the characters behind the scenes:

James – Managing Director and son of founder Stephen Knox, James knows the business inside and out. A stickler for quality, he oversees production with care and consistency.

Leahana – Factory Manger – Passionate and energetic, she leads the team with a perfect balance of fun and professionalism. With a keen eye for detail, she ensures every order meets our high standards while expertly managing stock.

Brian  – A senior butcher with over 25 years’ experience. Known for his dry sense of humour and perfectly tied joints.

Lewis – One of the next generation of butchers, Lewis brings a fresh eye and serious attention to detail.

Joy – Is the driving force behind our sausage production, ensuring everything runs smoothly from planning to the finished product. Her passion and leadership ensures production meets our high standards of excellence. 

It’s this mix of experience, tradition, and teamwork that makes our butchery so dependable.
