When it comes to great-tasting beef, not all cattle are created equal. At Yorkshire Dales Meat Company, we’ve chosen to focus on one of the world’s most respected breeds, Aberdeen Angus. But why this particular breed? What makes it so special?

A Breed Steeped in History – Aberdeen Angus cattle originate from the rugged northeast of Scotland, where they were developed in the early 19th century. Hardy, compact, and naturally polled (hornless), they quickly became popular with farmers for their easy calving, good nature, and adaptability to varied conditions.

But what really set them apart, then and now, is their ability to produce high-quality beef with exceptional texture and flavour. Over time, Aberdeen Angus became a trusted name in meat production, known for its marbling, tenderness, and consistent eating quality.

This heritage matters. When you choose Angus beef, you’re not just buying into a breed, you’re buying into centuries of careful breeding and tradition.

Why We Chose Aberdeen Angus  – At Mill Close Farm, we started our commercial Aberdeen Angus herd over 20 years ago, and in 2017, we took the next step by establishing our pedigree Mill Close herd.

Why? Because this breed fits our philosophy perfectly. Aberdeen Angus cattle thrive on grass, are naturally docile, and produce superb beef without the need for intensive systems. That’s good for them, good for the land, and good for the people who eat our meat.

We’ve invested in some of the very best breeding stock from the Rawburn and Linton Gilbertines herds in Scotland, names well known for producing cattle with strong genetics and outstanding Estimated Breeding Values (EBVs).

Standouts in our herd include:

Rawburn Elsie R067 – Purchased in 2017, with an impressive combined EBV of 115

Rawburn Ebony R091 – Another top female purchased the same day

Rulesman Paycheck Y680 – Our main stock bull

These genetics aren’t just numbers, they translate into real-world results: healthy animals, efficient growth, and consistently delicious beef.

It’s All About the Marbling – So, what gives Aberdeen Angus beef its signature richness and tenderness? In a word: marbling.

Marbling refers to the small streaks of intramuscular fat that run through a cut of beef. Unlike surface fat, marbling melts during cooking, naturally basting the meat from within. The result? A more succulent, juicy, and flavoursome bite every single time.

Aberdeen Angus cattle are known for their superior marbling, even when raised on a grass-based diet. That’s why chefs, butchers, and home cooks alike often seek it out.

And it’s not just about indulgence, marbled beef also tends to be higher in Omega-3 fatty acids and more nutritionally rich, especially when the animals are raised the way ours are: outdoors, slowly, and with space to graze.

Low-stress handling is widely recognised as a key factor in producing better beef. When animals are calm, their muscles stay relaxed and their bodies aren’t flooded with stress hormones, which can affect flavour and tenderness.

At Mill Close Farm, we go out of our way to create a low-stress, high-welfare environment for our herd. The result? Happier animals, smoother farming and beef that’s second to none.
